Yeah Pancakes

The birthday breakfast menu consisted of smoothies with banana's frozen strawberries, plain yogurt and apple juice. Boy were those tasty. Bacon and pancakes were also served. I used the Cottage Cheese Pancake recipe in my new cookbook "Wheat-Free, Gluten-Free Cookbook for Kids and Busy Adults." Instead of using the flour mix like they said I just used rice flour. I haven't bought all my flour ingredients to make up a mix. They tasted great, the kids loved them and they were scarfed down. The birthday party was a smashing success, I survived and now the house is totaled.
